Wookey Hole Cave Aged Cheddar is the only PDO traditional West Country
Farmhouse Cheddar to be matured in Cave.
PDO regulations protect the names of traditional foods in order to define their
authenticity and preserve their place of origin, traditional methods of production
and essential ingredients. West Country Farmhouse Cheddar is one of a small and
exclusive list of British foods protected in this way.
Any food of PDO status must undergo an ongoing process of rigorous auditing.
Cheese can only be called ‘Traditional West Country Farmhouse Cheddar’ if:
- West Country Farmhouse Cheddar is made from cows’ milk produced in Dorset, Somerset, Devon and Cornwall.
Only Cheddar Cheese produced on farms within the County Boundaries (as defined in 1955) may carry this designation. - West Country Farmhouse Cheddar is manufactured to traditional methods which include the unique process known as ‘cheddaring’. This is where we cut, stack and repeatedly turn the curd to remove as much of the whey as possible.
- We must adhere to the highest standards of food production and are routinely inspected to ensure compliance
- West Country Farmhouse cheddar can only be sold after it has been matured for at least 9 months. West Country Farmhouse Cheddar has a nutty, full, rounded flavour with a hint of sharpness. The internal colour shall be uniformly consistent creamy yellow. The body shall be firm with a slightly open texture.
